Usually I beat a dead horse before I barbeque it. Horse meat is rather stringy and tough, but if you beat on it, it helps to tenderize the meat, plus helps release the bold rich flavor of the meat itself. With a good, freashh homemade bbq sause, it make for a hell of a tasty sandwich. It is allso quite good in bbq atew.
