Just because a pattern calls for using circular needles does not mean they have to be used. Almost any pattern can be made with straight needles or by using two circular needles if you need to cast one a really large number of stitches. The simplest way to make a headband is to just decide how wide you want it to be and start knitting a strip that width on straight needles. Knit until it is about an inch less then will fit around your head, cast off the stitches and sew the ends together. By making it a little short, it will stretch when you wear it and that will make it fit snugly which will make it fit and stay on your head a little bit better.
