Walking and jogging is actually one of the most effective exercises to burning fat, so you are on the right track, as for the 1 mile one day and 2 the other I am not too sure but I really dont think it will hurt. One thing I should mention is that if you wake up early in the mornings and do your walk you burn the calories you consumed the day before and makes the whole exercise much more effective.
