Is Bison dry or tough?
Bison meat is not naturally dry or tough. The animals we get our meat from are 20 to 30 months in age, the age they produce lean, moist meat. Bison is a delicate meat, and is not forgiving if overcooked or cooked at a too high a temperature. This is because bison naturally have a very low fat content. If bison is overcooked, it tends to dry out quickly, taking away the moisture and tenderness. If the meat is not overdone, this should not occur.
