If Im generating a client key set and don know the hostname, can I leave this value blank when using easy-rsa?

No. This doesn’t necessarily have to be your hostname, but it must be a unique identifier for that key set. It will be used to identify the machine that owns that key set when it logs onto the VPN, and comes in handy for client-config-dir setups.
