I don want Quiz Press to give the student guidance as to whether a particular answer is correct. Can I turn off that feature?

Yes. Choose “Quiz Settings” in the “File” menu and select the “General” tab. Switch the test type from “Practice Test” simply to “Test”. This change has the added benefit of not allowing students to correct answers after they have received their final score.
