Twinkies remind us of our childhood. Tiramisu reminds us we are adults. Now we can have the best of both worlds Tiramisu made with Twinkies! Making Tiramisu with Twinkies is so much easier because you don’t have to go to a specialty store to buy Savoiardi, which are the cookies that are usually used to make Tiramisu. All of the ingredients are available right in your neighborhood grocery store. I also use cream cheese instead of mascarpone because it is easier to find and much less expensive. In a small pot on the stove, bring water to a boil while stirring in ½ cup of sugar. Stir to dissolve the sugar. This will turn into a syrup like consistency. Pour into a shallow oven safe or heat safe bowl. Sir in ¾ cup espresso and ¼ cup Kahlua. Let it cool back to room temperature. In a separate large bowl, using an electric mixer, mix together 8 ounces of softened cream cheese, ¾ cup sugar and 1 teaspoon vanilla extract. Continue to beat until smooth.
