When you pick the beets, be sure to leave a few inches of the stems on them, but get rid of any leaves or any stems that are not healthy. The color in the stems is what will give your pickled beets that wonderful purple color. While still outside, spread the beets around in the grass and hose them off, then turn them over and hose them off again. This keeps a lot of the dirt outside instead of in your kitchen. Rinse them off again in the kitchen sink, placing them into a large pot. Cover them with water and put them on the stove on high.
