I find the best time of year to prepare these fritters is the fall, when apples are at their peak of the season. Your kids will love to eat them, just as much as they will love to help you make them. Peel and dice the apples into half inch cubes. Meanwhile, begin to heat the oil in a deep fryer or Dutch oven until it reaches 325 degrees. Whisk eggs and milk together. Sift dry ingredients together and add to the milk mixture. Stir to combine. Fold the apples into the batter. Now that the oil is pre heated, scoop fritter batter into 2 ounce portions and deep fat fry for 3-4 minutes per side. Flip the fritters over half way thru cooking and then remove to a paper towel lined plate. Serve with your favorite topping like maple syrup, brown sugar butter or powdered sugar.
