How Do You Make Delicious Lemon Mousse?
This is a rich and tangy, warm-weather or anytime dessert. Separate the eggs. Sprinkle the gelatin over the cold water. While the gelatin is soaking, beat the egg whites until light and fluffy. Set aside. Whip the cream and set aside. In a pot over simmering water, place the egg yolks, sugar, grated lemon rind and lemon juice. Slowly beat this mixture until all is combined and has thickened. To the egg yolk mixture add the softened gelatin and beat until all is dissolved. Place the above mixture in a bowl over ice water and let rest until it begins to set. Now beat the mixture until it is light and fluffy. Fold into the mixture the beaten egg whites. Fold in the whipping cream. Put the mixture into a serving bowl and refrigerate until well chilled. Garnish with berries if desired. Serve and enjoy!
