How Do You Cook Rosti?
• Mix together the flour, salt and pepper in a mixing bowl. • Skin (peel) the potatoes. • Grate the potatoes into a bowl. • Squeeze the potatoes to remove the potato juice. Wrap the grated potatoes inside a clean dish (tea) towel and squeeze until the grated potatoes are dry. • Add the squeezed dry potatoes to a mixing bowl. • Add the flour mixture in small amounts and mix it into the grated potatoes. Try to avoid clumping the grated potatoes together. • Add butter to the frying pan and heat until butter is hot. • Put the potato/flour mixture into the frying pan and disperse it evenly along the pan. Cook the potatoes to taste. Some people prefer their Rosti to be crispy while others enjoy just a browned golden color.
