    Honey Comb Coffee Cake

    Ingredients

    ,

    • 1 3/4 cups all-purpose flour
    • 1/2 cup white sugar
    • 1/2 cup unsalted butter
    • 1/3 cup milk
    • 2 eggs
    • 2 teaspoons baking powder
    • 1/2 teaspoon almond extract
    • 1/2 teaspoon orange extract
    • 1/2 cup unsalted butter
    • 1/2 cup chopped pecans
    • 1/4 cup white sugar
    • 1/2 teaspoon ground nutmeg
    • 1 tablespoon milk
    • 1/2 teaspoon orange extract
    • 1/4 cup honey  

    Method of Preparation

          

    1. Preheat oven to 350 degrees F (175 degrees C); grease and flour a 9 inch square baking pan.
    2. Combine flour, 1/2 cup sugar, 1/2 cup butter or margarine, 1/3 cup milk, eggs, baking powder, 1/2 teaspoon orange extract , and almond extract until well mixed. Spread batter into prepared pan.
    3. To Make Topping: In a heavy 2 quart saucepan combine 1/2 cup butter or margarine, pecans, 1/4 cup sugar, honey, nutmeg, 1 tablespoon milk, and 1/2 teaspoon orange extract. Cook over medium heat, stirring occasionally, until mixture comes to a full boil . Continue cooking, stirring occasionally, for 2 or 3 minutes. Pour topping evenly over coffee cake.
    4. Bake 22 to 27 minutes, or until wooden pick inserted in center comes out clean.

    Best to serve to your guests with coffee before or after Thanksgiving dinner!

    Fruit Salsa

    Ingredients

    • 1 cup strawberries, finely chopped 1 orange, peeled, seeded, and finely chopped
    • 3 kiwis, peeled and finely chopped
    • 1/2 cup fresh pineapple, finely chopped
    • 2 green onions, finely chopped
    • 1/4 cup yellow or green bell pepper, finely chopped
    • 1 jalapeno pepper, seeded and minced
    • 1 Tbsp. fresh lime juice

    Method of Preparation

    Put all the ingredients into a bowl and mix well. Cover and chill for several hours or overnight. Tip: For a quick way to make chips to serve with the salsa, brush flour tortillas with melted margarine, sprinkle with a mixture of cinnamon and sugar, cut into wedges, and bake at 350°F until crispy.

    This dish will appeal to your guests when you are hosting a Thanksgiving dinner party in your home. It can be served as an appetizer or Hors d’ oeuvre’.

    Peach Cobbler

    Ingredients

    • 1/2 cup raw sugar or other sweetener
    • 2 tablespoons cornstarch or arrowroot powder
    • 4 cups fresh peaches, sliced
    • 1 cup water
    • ground cinnamon
    • 1 cup whole wheat pastry flour
    • 2 tablespoons sugar
    • 1-1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 3 tablespoons margarine
    • 1/2 cup soy milk or water

    Method of Preparation

    Combine sugar and cornstarch in a saucepan, then stir in the peaches and water. Bring to a boil, then boil 1 minute, stirring constantly. Pour into a 9" square baking dish and sprinkle with cinnamon.

    Preheat the oven to 400° F.

    Combine flour, sugar, baking powder, and salt. Cut in margarine until mixture resembles cornmeal. Stir in soy milk until mixed, then drop by spoonfuls onto the hot fruit. Bake until golden brown, about 25 minutes.

    This dish may appeal to the dinner guest who is more into the traditional style of dessert service!
