Cooking a whole chicken, shredding it after it has cooled, and using the meat for one or more casseroles is a way to create multiple meals. These meals can then be frozen to save meal preparation time later. Use one of these chicken casserole recipes to make dinner tonight!
Swiss N Chicken Casserole
What you need
4 cups chopped cooked chicken
2 cups croutons
1-1/2 cups Shredded Swiss Cheese
2/3 cup salad Dressing
1/2 cup milk
4 stalks celery, sliced
1/4 cup chopped onions
How to prepare
Preheat the oven to 350 degrees F.
Combine all the ingredients together.
Spray a 2-quart casserole dish with nonstick cooking spray. Pour ingredients into casserole dish.
Bake for 40-45 minutes.
How to serve
Serve casserole with a side of salad or vegetables.
Bruschetta Chicken Mac and Cheese
What you need
1 pkg. (12.6 oz.) Macaroni & Cheese Dinner Old World Italian Sauce with Parmesan and Romano Cheese
2 Tbsp. unsalted butter
1 lb. boneless skinless chicken breast, cut into bite-size pieces
1/2 cup milk
1 tomato, chopped
2 Tbsp. chopped fresh basil
1 Tbsp. Grated Parmesan Cheese
1/2 cup Shredded Mozzarella Cheese
How to prepare
Preheat the oven to 425 degrees F.
Cook the macaroni according to the package directions.
In a large skillet, melt the butter then add the chicken and cook for 5 minutes or until browned evenly. Stir in the seasoning mix blending chicken and mix well. Slowly stir in the milk and stir while cooking another 3 to 4 minutes. The sauce will bubble and thicken. Add the cheese pouch and stir on low heat until the mixture is blended.
Drain, but do not rinse, the macaroni. Add this to the chicken mixture with tomatoes, basil and the Parmesan cheese. Cook until heated.
Spray a casserole dish with non-stick spray and pour mixture into dish. Top with mozzarella cheese and bread crumb topping. Bake until cheese has melted.
To Serve
Serve this casserole with a side salad or fresh fruit and a side of vegetables.
