    Fresh, hot, healthy blueberry muffins and a cup of coffee make a great afternoon snack, especially during the cold winter months. And what’s better is healthy blueberry muffins are so simple to make that you can double a recipe and have extras to freeze or take to work or brunch. All it takes is a little preparation and in less than 30 minutes, hot muffins will be emerging from the oven.  Just follow one of these traditional easy blueberry muffin recipes, serve, and enjoy!

    Healthy Blueberry Muffin Recipe #1

    Yields: 8 large muffins

    What you need

    • 1 1/2 cups all-purpose flour
    • 3/4 cup white sugar
    • 1/2 teaspoon salt
    • 2 teaspoons baking powder
    • 1/3 cup vegetable oil
    • 1 egg
    • 1/3 cup milk
    • 1 cup fresh blueberries
    • 1/2 cup white sugar
    • 1/3 cup all-purpose flour
    • 1/4 cup butter, cubed
    • 1 1/2 teaspoons ground cinnamon

    How much time it will take

    Preparation time: 15 minutes

    Baking time: 25 minutes

    Let’s bake!

    1. Preheat the oven to 400 degree F. Line a muffin tin with muffin cups or grease the muffin cups.

    2. In a large bowl add salt, baking powder, 1 1/2 cups of flour, and 3/4 cup of sugar. Mix together.

    3. Add oil, egg, and milk to mixture. Combine.

    4. Gently stir in the blueberries.

    5. Fill muffin cups 3/4 of the way full.

    6. Make crumb topping by combining 1/2 cup sugar, 1/4 cup butter, 1/3 cup flour, and 1 1/2 teaspoons of cinnamon. Use a fork to mix this combination together so mixture looks like streusel. Sprinkle the mixture on top of the muffins.  If you do not like cinnamon, that can be removed from the crumb topping.

    7. Place muffins in preheated oven and bake for 20 to 25 minutes, or until a toothpick comes out clean.

    8. Remove from muffin tins to cool on a plate.

     

    Easy Blueberry Muffin Recipe #2

    Yields: 18 muffins

    What you need

    • 1/2 cup butter
    • 1 1/4 cups white sugar
    • 2 eggs
    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/4 cup milk
    • 2 1/2 cups fresh blueberries
    • 1/4 cup white sugar

    How much time it will take

    Preparation time: 15 minutes

    Baking time: 30 minutes

    Let’s bake!

    1. Preheat the oven to 375 F. Line muffin tins with muffin cups or grease the muffin cups.

    2. Combine the butter and sugar in a large bowl. Cream until light and fluffy.

    3. Add eggs one at a time to the combination and mix.

    4. In another bowl mix the flour, salt, and baking powder. Add this to the large bowl alternating with the milk. Add blueberries one of two ways. Mash 1/2 a cup of blueberries to add, then folding the remaining in the batter or just fold all the unmashed blueberries into the mixture.

    5. Fill muffin cups 3/4 of the way. Sprinkle the tops with sugar.

    6. Bake for 30 minutes or until a toothpick comes out clean.

    7. Let cool before removing from muffin tins to serve.
