With many of us trying to eat healthier it helps to have some low fat dishes to make.
Stir Fry Chicken
When you think of stir fry, you may think of a dish that is full of oil and high in fat. This recipe is delicious and low fat.
1 lb of chicken breasts, cut into 1" pieces
1 large onion, roughly chopped
1 large pepper, cut into strips
1 small zucchini, sliced
chicken stock
1. Place chicken stock into a wok or frying pan. Add onions and cook until transluecent.
2. Add pepper and zucchini. Cook for about 5 minutes.
3. Add chicken and cook until chicken is cooked through, about 3-4 minutes. Add more chicken stock as needed and sprinkle with your favorite spices. Italian seasoning would be great in this dish.
Serve with a side salad with a light dressing and you will have a great low fat dinner.
Turkey Burgers
If you love burgers, but are trying to cut back on your fat intake, turkey burgers are an excellent choice.
1 lb. ground turkey
1 Tbsp. all purpose seasoning of your choice
Mix well and form into 4 burger patties.
Tip: If the patties are not staying together as well as you would like, it will help to put them in the freezer for about a half hour with parchment paper between them.
Add lettuce, tomato, onions and serve on a whole grain bun and you have a healthy low fat burger.
Steak and Potatoes
Choose a top sirloin or top round steak and you will have a low fat cut of meat. If you make the steaks on the grill you will not have to add additional fat.
To serve 4 people:
14 oz. of top round steak
4 medium potatoes
Low fat sour cream
Chives
Grill the steaks, about 12-15 for a 1" steak cooked to medium
To make the potatoes, first wash them, then cut them into cubes or slices.
Spray 4 pieces of foil with non stick cooking spray one cut up potato on each piece
Wrap the potatoes in the foil and place on the grill until easily pierced with a fork.
Serve with sour cream and chives.
