This recipe is truly for a comfort food breakfast, fit for a farmer or anyone else for that matter. It can be prepared all in one skillet, which makes a easier clean up. It is rather easy to make, and even easier to take in the compliments. The flavor is scrumptious, and satisfying. In one pan you will be add nutrients from vegetables, eggs, and dairy. Feel free to change the ingredients up to suit your personal taste. If you are in the mood for a button busting breakfast, try adding some precooked sausage, and toast or biscuits to round out this farmers breakfast.
COOKING TIME: 15-20 minutes
SERVES: 4-5
INGREDIENTS:
4 medium potatoes, precooked in microwave
1/2 onion
1/4 cup green pepper
2-3 tablespoons olive oil
6 large eggs, whisked
1 cup shredded cheese
Salt & pepper to taste
METHOD:
1. Precook potatoes in the microwave, let cool, peel, and dice into bite size pieces.
2. Chop onions and peppers.
3. Add oil into skillet. Allow to warm before adding the vegetables.
4. Lightly brown and pour whisked eggs evenly over the top.
5. Allow eggs to set (a couple of minutes).
6. Sprinkle cheese over the top.
7. Salt and pepper according to taste.
