A beef roast dinner has got to rate high on the American comfort food list.
By cooking your roast in the crock pot, or slow cooker you can have your dinner all ready and waiting for you. In fact, if dinner runs late, no problem, you can turn off your cooker and it will stay hot and ready for whenever you are. This is a easy recipe, but the best thing about it is, the taste. By giving your roast a little spice, the flavor will be enhanced. By cooking with the slow method, your roast will be melt in your mouth tender.
COOKING TIME: 8 hours
SERVES: 6-8
INGREDIENTS:
2 pound beef roast
2 Tablespoons olive oil
Flour for dusting
1/2 cup ketchup
1 Tablespoon vinegar
1/2 teaspoon Dijon mustard
1 teaspoon garlic powder
2 Tablespoons molasses
1 teaspoon Worcestershire sauce
Dash of chili powder
6 medium potatoes, peeled
6 medium carrots, sliced
1 onion, sliced in half
2 cups beef broth
Salt & pepper according to taste
METHOD
1. Dust beef with flour.
2. Brown beef on all sides in oil in large skillet.
3. Add ketchup, vinegar, mustard, garlic powder, molasses, Worcestershire sauce, and chili powder.
4. Simmer and stir in the pan, spooning sauce over beef.
5. Place all ingredients into cooker.
6. Add potatoes, carrots, and onion to the pot.
7. Pour broth over the top.
8. Add salt and pepper. (more can be added before serving)
