Bread pudding rates very high on the comfort food list. Oh how good it is, to come home to the aroma of baking bread with butter and cinnamon, flowing from the kitchen. Many may think this is too time consuming to attempt, but really it is a easy country dish. Older ones might have memories of the warm home cooked delight. Younger ones will just want more. To save calories, the sauce can be left off. You may choose to top it off with a scoop of ice cream. The choice is yours. But my vote is go with the sauce.
COOKING TIME: 45-50 minutes
SERVES: 12
INGREDIENTS:
2 cups milk
1/4 cup butter
2/3 cup brown sugar
3 eggs
3 teaspoons cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla
1/2 cup raisins
3 cups bread, torn into small pieces
METHOD
1. Preheat oven at 350. Spray baking dish with baking spray.
2. In a medium size pan, heat the milk just until it forms a film over the top.
3. Add butter, stir until melted, and allow to cool.
4. Beat the sugar, eggs, cinnamon, nutmeg and vanilla for 1 minute, and stir in raisins.
5. Combine with the milk mixture and stir well.
6. Place the bread pieces in the baking dish.
6. Pour mixture over the bread, and bake for 45-50 minutes.
SAUCE
1/2 cup sugar
1/2 cup brown sugar
1/2 cup water
1/2 cup butter
1 teaspoon vanilla
Combine sugars, water, and butter in a small sauce pan, boil while stirring for 5-6 minutes. Stir in vanilla. Slowly pour sauce over the bread pudding.
