If you would love sweet cream loaded with ingredients like coconut, and almonds topped with whipped cream then this recipe is for you. You can prepare this pie a day before serving, in a ready made graham crust.
COOKING TIME: 5-10 minutes
SERVES: 8
INGREDIENTS:
1/2 cup sugar
3 eggs
3 tablespoons flour
1 1/2 cups milk
1 1/4 cups sweetened coconut
1 teaspoon vanilla extract
1/4 teaspoon coconut extract
1/2 cup chopped almonds
1 medium sliced banana
1 ready made graham pie crust
Whipped cream
METHOD
1. Beat together the sugar, eggs and flour, set aside.
2. Bring milk and coconut just to a simmer over medium heat.
3. Slowly combine both mixtures in pan.
4. Cook, while stirring until the moisture thickens and boils, about 4 minutes, remove from heat.
5. Add extracts, and walnuts.
6. Pour filling into a medium size bowl, press plastic wrap on the top of the filling to prevent skin from
forming.
7. Refrigerate 2 hours, gently fold in bananas, pour into crust.
8. Cover, and refrigerate over night.
9. Top with whipped cream.
