You can eat a lot of eggs on Atkins. Isn all that choleterol unhealthy?
If Atkins had to name a perfect food, the egg would be it. While many foods supply a handful of vitamins and minerals, eggs are nature’s perfect food. The egg is one of the few foods that can provide all eight essential amino acids, the building blocks of protein (as well as choline). Since our bodies don’t manufacture these eight substances, we have to get them through foods or supplements. The yolk of an egg is full of protein, so eating egg-white omelets, for example, means missing out on the most nutrient-dense part of the egg. More over, the cholesterol found in an egg will have no impact on your total blood cholesterol when following a controlled carbohydrate nutritional approach.
