Would an animal change its food source if given the chance?

Organisms have to change with their environment, or go extinct. So if their food source became extinct or was replaced with a different food source, then they would have to adapt to a new food source. If this happened over a long period of time then their digestive systems would slowly evolve to fit that food source. Say if an animal ate a certain plant, and that plant slowly over centuries started going extinct and was replaced by another plant species, their digestive systems would minorly evolve with it. But if the change was insignificant, their digestive systems would be able to process it and it wouldnt cause any damage.
