With the films taking up a lot of space are there many HD disc with lots of extras? If so are those extras normally in HD too?

Plenty of room for extras. Some will be SD, some will be HD depending on the source and age. In future I expect to see studios will make a selling point of all HD stuff but atm many are just coming to market asap.
