Will Garam Masala work in place of Curry Powder?
As above, curry powder is mainly the spices in garam masala (it means “warm spices”, BTW.) No Indian cook would use curry powder. I use a mix of hot chilli powder (you use less than mild, so more economical), garam masala, and turmeric. This allows you to experiment with the heat and spiciness, until you achieve curry nirvana.
Nooooooooooooooooooooo! Garam Masala is used at the end of Indian cooking to adjust the flavours of dish – it’s more like a seasoning. Garam Masala will typically contain coriander, cinnamon, ginger, cumin and cardamom. NOTE there is NO chilli powder in it so you just wont get any curry heat. If you want curry powder you can get several sorts including hot, Madras, mild, chinese and Thai red and green from the site quoted. 84p a box, £3.50 flat postage so stock up to get value. The site also explains each spice well so you can understand how to use it. They also sell loads of herbs and spices and curry kits which contain all the spices you need for particular curry recipes. The kits are about 1.99 each and serve four (sameish as a cook in sauce) and they tell you exactly what else to buy and guide you step by step through the cooking process so you end up with an amazing curry.
