The bakery I work at makes cream cheese frosting and we put it on hot cinnamon rolls. I wouldn’t say it “melts”, at least not like butter or shortening but it definitely thins out when it gets hot. We use it on our carrot cake too and decorate it with colored (frosting) carrots-they do lose their shape when it gets really hot (like 85 degrees or more). Don’t know how many you are making but maybe you could put the frosting in a zip lock bag and keep in a thermos or ice chest. When your ready to serve them, snip the corner off the bag and squirt a big swirl of the frosting on each cupcake. Maybe make a couple bags full and have some friends help you squirt.
