Will a Yankee Standard Roll Film Daylight Developing Tank work for my photography class?
Sure, it will work just fine for developing one roll of film at a time, unless your photo teacher insists you learn how to go through the painstaking practice of learning how to load Kindermann/Nikkor reels. Caution, the tank and reel must be thoroughly washed after use as they have a tendency to trap nasty chemicals between the post and the sliding reel. Since Yankee tanks are made of a hard plastic called bakelite, they have a tendency to crack when dropped which would, if not discovered, let light in and ruin your film. Other than those cautions, go for it.
