Why SOTA only provides bamboo boards and not wooden boards? Why not?
There is nothing wrong to use wood for our cutting or breadboard. We choose bamboo simply because it is a better material! Bamboo due to its coarse, open cell structure, bundles of microscopic fibers laid parallel to each other, much like the strands within the sheath of a bridge cable. The spaces between adjacent bundles or cords of the bamboo are filled with lignin, a thermoplastic resin, giving its tensile strength is 28,000 per square inch versus 23,000 for steel! It is also 16% harder than maple making it a perfect for a cutting surface and absorbs less liquid and is typically easier to wash since knife cuts won’t be as deep.
