Preheat oven to 350 degrees. Remove gizards, neck, heart, and liver from chicken cavity and rinse well with water. Season cavity with salt and pepper or, if you are feeling brave, try adding a little chili pepper. You can also put some chopped onion and celery in the cavity for a real tasty flavor. Place chicken on roasting rack, breast side up, and, to avoid burning, tuck the wing tips back behind the wing joints. Brush olive oil over entire chicken. If you wish to season with salt and pepper, sprinkle them over the chicken (not necessary). Place chicken on center rack and bake for 1 1/2 hours. Pull chicken oat of oven and brush with Island Delight Sweetn’ Sour BBQ sauce. Bake approximately 15 – 20 minutes or until chicken is thouroughly cooked – use meat thermometer to be sure. Chicken legs should be loose; skin will be crispy; and the meat, delicious.
