Why my angel food cake tastes like egg?
That sometimes happen with angel food cakes, I’m told. It’s never happened to me, but allowing the cake to cool completely lets the cake vent off its “eggy flavor”. If it persists even after the cake is cool, it may be that your eggs were very old. Ordinarily that would prevent the cake from setting up properly, but maybe yours worked anyway. Finally, you may need to try a different recipe. An angel food cake IS mostly egg, with just enough flour and sugar to hold it together and make it more like a sponge cake and less like a meringue. Seek out a recipe with a bit more sugar in it.
