first of all, I think if you look at the surrounding system, you will see that most objects tend to have similar angular momentum directions in the solar system (and galactic system, etc) because they were made out of the same cloud of gas and dust originally that all had more or less a homogeneous angular movement (anything that has a drastically different angular momentum would have been changed by collisions with the background particles). So even if the rings came from multiple moons or larger chunks of material originally, those moons would have been orbiting in the same direction. But not exactly the same direction and speed. So imagine you have material that is generally orbiting counterclockwise around saturn and colliding and breaking up.
