If your Hyperoo server is running on Windows 2003/2008 you have the option of enabling volume shadow copy on your Hyperoo array disks. This would enable you to kick off a VSS snapshot prior to your backup schedule that would allow you to store a history of versions of your backed up Hyper-V VHD file.
