Dark meat (red muscle/slow twitch muscle) contains more myoglobin (iron containing molecule for the storage of oxygen, iron with oxygen bound is red). These muscles are used for more endurance type exercise and predominately use aerobic metabolism. White meat (white muscle/fast twitch muscle) do not contain very much myoglobin but instead stores more glycogen (sugar). These muscles are used for rapid relatively short movements (like sprinting), and predominately use anaerobic metabolism. Chicken (which do not fly) use the breast muscles to flap their wings rapidly to try to startle/scare away predators. Ducks and geese on the other had (which do fly) have dark meat breast muscles because flying is an endurance exercise.
