The sap is boiled down without additives or preservatives. Vermont has the strictest standards for maple syrup in the U.S., and maple tap hole disinfectants are illegal. Vermont’s guildlines for maple sugaring also ensures that there are no pesticides used in the management of “sugarbushes”, also called maple groves. In fact, most Vermont sugar-makers have a forestry plan in place which is overseen by a registered/licensed forester.
