Why is the use of symbols and signs helpful for communication for a hearing disabled people?

From my research, I have noticed that many people are not born with the disability, but become that way over time. For example, people who are blind typically develop blindness sometime in their lifetime. They cannot read Braille, but learn through the use of symbols. I am sure it is similar for the hearing impaired. People using FotoDialer that are blind will put symbols on the pages to represent people to call instead of seeing their photo as a way to call them. Again, that may be a template with the hearing impaired. Below is a link that might show it.
