First, keep in mind the sun is nowhere near a perfect sphere. Now, I might be wrong about this, but I think “spheres” are the natural ocurring shape for everything in nature, for one simple reason: They are easier to make. It takes more energy to deliberately shape a corner and is almost impossible for this to happen with gases, I’d say.
