It’s due to the rotation of the Earth. I think the actual physics behind it is complicated, but basically objects that are spinning have a tendency to flatten out, causing the equator to be fatter then the poles. The faster the spin, the greater the effect. Jupiter has a much shorter day then Earth, and so it’s difference in radius for the poles and equator is more noticeable.
