Baobab has very high vitamin C, calcium and other vitamins and minerals, plus fiber. Baobab Fruit is naturally dried (i.e., it is not required to freeze dry it). The dry powder contains about 5x the vitamin C as an orange (which of course is not dried), plus it is high in calcium. It is used a rehydration agent in Africa (with water of course) and to fight diarhea. It is about 50% dietary fiber (soluble and non-soluble). Baobab makes a great smoothie base. It is easily water dispersable, and tastes ok plain, but I prefer a little sugar, and maybe a little fruit juice. Baobab has a mild acidic taste. When mixed with other fruits (say in a smoothie) it has a very nice base flavor. The high fiber (pectin) also helps with the texture of the smoothie. I believe it is called the tree of life because of its health benfits, its refreshing taste in drinks, and the fact that it grows on the dry savannahs in Africa- where it may save your life by supplying food.
