The iconic pink that is seen ringing the first 1/4 inch of of Tandoori chicken is caused by spices or food additives. This was originally achieved by the type of chili powder, but now is commonly imparted by using red food dye. It has nothing to do with the doneness of the dish.

If Tandoori Chicken is pink, then is is not cooked well enough. You should cook the chicken on grill until no longer pink and juices run clear. Garnish with cilantro and lemon wedges. Thanks!
