WHY IS SOY LECITHIN AN INGREDIENT OF THE MILK POWDER?

The soya lecithin is in the whole milk varieties. It does not come in the skim milk versions but we have to state it, as there may be traces. We have never heard of anyone who has a bad reaction to soya lecithin. In fact, it is in many powdered products to make them dissolve easily, but in very small amounts. It is used to instantise the milk powder ie keep the milk protein from lumping .
