Why is my copied audio CD only showing up with one track called “data”?

Because it is a data CD with audio on it, as opposed to an audio CD. You can get the audio from the CD by using Windows Explorer to look inside the CD (as you would a hard drive) and just copy and paste the files without the use of this program.
