Why is lemon, lime or orange added?
A. A squeeze of lemon, lime or orange juice is traditionally added to fresh sugar cane juice to give it a pleasant taste and to slow down the oxidation process. Citrus fruit contains ascorbic acid (vitamin C) which helps stabilise cane juice and slow down the oxidation process. Oxidation is what turns apples brown when you cut them in half. So adding a squeeze of lemon, lime or orange gives it more flavour and makes the nutrients last longer so you can take it home to drink.
