Taho is made fresh everyday similar to Tokwa, Toho and Soy Milk, they are all made without chemical preservatives and since Tokwa, Toho and Taho are all made from Soy Milk, Taho are customary served and sold during day time as a protein rich yet light meal together with hot Soy Milk and Donut like pastry in China. Because of the hot climate in the Philippines, Soy Milk and Soy Products can spoil easily without refrigeration and/or pasteurization. Tokwa and Toho on the other hand are much resistive to spoilage since the process needs other ingredients like salt (Natural Preservative, gypsum? which is a natural mineral, and coagulating agents like Vinegar) and can last longer hours than Taho and Soy Milk without refrigeration. Market forces dictates the type of products sold.
