Why is it acceptable to eat duck breast rare but not chicken?
Answer Nicole: Between you and me, I would not eat store bought duck rare. In high school, I worked in a poultry plant in Virginia. We processed 3000-3500 chicken in a 5 hour shift. We cut the chicken into fryer parts. My cousin worked days in the evicerating crew. They pulled the guts etc, and packed the chicken in ice for us to cut up at night. I worked from 5-10pm. My first week I worked in the ice house grinding blocks of ice to be put on the chicken in big metal tanks on wheels. There was a big auger in the floor and we shoveled ice away from the grinder into the auger, really a big screw that carried the ice to a chute to drop on the chicken. He chewed tobacco and spit it in the ice. I kid you not. I can remember these big brown blotchs of ice disappearing in the auger to go on to the chicken. Anyway, most salmanella bacteria is introduced to chicken meat during the processing. It comes from the chicken fecies. Egg processing plants have the same problem hence the warning about e
