Why is having cross overs in my kitchen a bad thing?

Food and grease clog pipes. It’s bad enough that you have to have your lines snaked and or jetted from the grease trap and into your kitchen from time to time. But when your lines cross over to the black water line you are involving the whole collection system. You now have a strong possibility of clogging your whole facility with this food and grease waste. This is what causes main line clogs effecting not only the kitchen but your bath rooms and flooding out the grease trap. One reason for grease trap back ups is from a down line clog. Sewer lines are not meant to handle food and grease.
