With natural juices and tea, it’s all about freshness. Being flash pasteurized means the juice and tea mix is heated up quickly to a high temperature, then immediately cooled so it doesn’t overcook. Then the bottles are cold-filled. The result of proper flash pasteurization is full potency and raw, fresh flavor. In addition, we add citric acid (found naturally in fruit), which helps to stabilize, and a shot of nitrogen evacuates the air and slightly pressurizes the bottle. Why isn’t it USDA Certified Organic? Although the tea we use IS certified organic, certified juices are difficult to source consistently. Ironically, making certified organic tea shots using unnatural “natural flavors” like other companies would be easy. But we wanted to use REAL juice.
