Why is classical guitar commonly taught using tablature rather than music scores?
No, it isn’t commonly taught that way. Tablature has its place. It’s a good way to communicate music that is physically oddball on the instrument (playing high on low strings). And the lute tradition was always mostly a tab tradition. But most classical guitar music is not available in tab. You need a new teacher.
