Why is Big Ring Bakery changing their retail distribution for the winter?
We’re restricting the number of retailers, and requesting pre-orders for our products, for two main, and related, reasons. The first is to reduce the amount of food that goes to waste. We found that a conventional retail distribution model worked in the busy season, but that we were throwing away a lot of good food in the shoulder seasons and winter, and wanted to change that. No one likes wasting food. The second reason is reducing costs. GF is already expensive, even our products, and we found that factoring in the waste was going to force us to increase our prices for the fall and winter. This pre-order and pick up at the CSA system is an attempt to hold our costs, and therefore prices, down through the spring. We appreciate your patience with the shift, and let us know what you think!
