Because of the extra time that’s needed to bring it out of its "chill" state. Refrigerators are required to be 40 degrees F and under.

When cooking with an outdoor grill, there are some items that you want to let come to room temperature before cooking: steaks (especially if you like them rare) and anything you plan to smoke (brisket, ribs, chicken).
