When fruit and vegetables are cooked they lose many of the vitamins and nutrients. Cook any plant over 120 degrees and all nutritional benefit has been destroyed. When food is processed the nutritional value is processed out and that is why the grains in cereal, bread, and pastas are enriched. Even milk and juice have been vitamin fortified. The initial vitamin have been cooked and processed out. There is no replacing the enzymes that have been cooked or processed out. Many times the enzymes found in fruit, vegetables, whole grains, nuts and beans are as important if not more important that the specific vitamins. That is another reason why it is important to eat fresh and raw. As a fruit or vegetable is cut open they interact with air and the chemical reaction causes them to lose their nutrients.
