The simple answer is, it’s expensive. Putting a few basic herbs and spices in a bottle or container is relatively inexpensive. You will also notice that typical Italian seasoning mixes contain herbs and spices which look very similar. The ingredients are approximately the same size and weight. Unfortunately, the right blend of herbs and spices contains ingredients which vary in size, weight and flavor intensity. The only way to achieve the proper blend is to carefully blend all the ingredients in small batches and immediately place them in a flavor sealed pouch. That can not be done in a typical seasoning container because the ingredients would separate and there would be no way to get the right amount of each herb and spice every time.
