Onigiri should be made when the rice is warm to the touch, not cold. That’s why your rice grains aren’t sticking together – the starchiness of the rice comes out best when it’s still hot. Also, you can just dab your hands with a little bit of warm salted water – soy sauce is used when you’re making yaki onigiri. What you could do is to buy a triangular onigiri mold! I have a couple of different shaped ones and I LOVE using them when I’m feeling lazy. That way you won’t have to shape it yourself and you can probably squeeze the cold rice together until it sticks, lol!
